Vegan Smoothie with a Superfood Twist

Lets kick things off with something completely delicious and of course nutritious.  I will be honest and say that I am not the best for eating fruit, I do eat it but I find it a bit of a struggle sometimes.  This little beauty of a smoothie has changed my view on that.  Absolutely yummy and it looks beautiful too.


So what's in it???

Banana 
Strawberries + extra to cut up
Blueberries + extra to cut up
Almond and Coconut Milk
Rolled Oats
and finally Chia Seeds (I was a chia seed virgin before this)

I just threw everything in a bender and finished it off with some extra strawberries, blueberries and a sprinkle of Chia Seeds for an extra dose of omega 3 :-)

Super easy to make and absolutely delicious I promise.  For those of you with a sweet tooth I am sure adding some Agave Nectar would sweeten it right up.

Final step is to grab your favourite magazine and a spoon! Yum!



Allow me to Introduce Myself

Hello, My name is Emma and I am becoming Vegan (again).  This is my second attempt.....well actually more like the tenth as I cheated quite a few times the last time.  I want to go on a discovery of the vegan diet and lifestyle and prove that vegan food can be delicious.  I have been vegetarian for most of my life, I made the decision when I was very young and I have never regretted it or once craved or missed eating meat. Being vegan however...cheese has always been my downfall but I am determined to change my habits, cut-out dairy and find yummy alternatives to that grated parmesan.

Becoming vegan is a huge lifestyle shift and I plan on sharing how I deal with the day to day issues that inevitably pop up.  Part of me is a bit fed-up having to apologise for my lifestyle choice.  I get pretty tired of the looks of bewilderment you get when you tell someone you are vegan and also having to explain every time that "no I don't eat fish".  A confused Why? Is usually the first question, followed by the good old caveman debate.  Well I am not here to argue if hunting is part of our instinct as humans, but I am going to explain the mass overproduction, waste and damage to our environment that the meat and dairy industries are now causing. The thought of having a healthy balanced nutritious diet without eating meat is just too much for some people to comprehend and that is absolutely fine. My hope is however to create a vegan recipe that just looks soo delicious that even the biggest meat eater would want to try it.

I wanted to create this blog to document the recipes I will be trying and also to invite you to share yours.  I have a few different cookbooks which I shall be trying out and also I will be sharing a few of my own favourite vegan comfort foods.  I want you to join me on my discovery of delicious vegan food and there should be some pretty photos thrown in there as well.
